Bitty Baklava Bites

I totally have a sweet tooth.  Luckily that hasn't affected my teeth!
I have a cavity free mouth!  Not bad for someone who is...never mind, I am not going to answer that.  Maybe it is my healthy brushing habits or maybe it is just having little sized treats to satisfy that craving.  Who knows, but whatever...
I love mini treats and these Bitty Baklava Bites are no exception!


I have a fabulous baklava recipe, but it takes some time and a little bit of work dealing with all those phyllo layers.  But, I have an easy way to recreate all that baklava deliciousness in a small little bite!


Sugary walnuts...

yep...easy Bitty Baklava Bites!

Ingredients to make 12-18:
1 cup chopped walnuts
1 Tbsp melted butter
1/4 tsp cinnamon
1/4 cup sugar
1 and 1/2 packages phyllo shells
1/4 cup water
1/2 cup sugar
1/2 tsp lemon juice
Directions:
Preheat oven to 275 degrees.  Line a cookie sheet with parchment paper.  In a bowl, mix together chopped walnuts, melted butter, cinnamon and sugar.  Fill up each phyllo shell with the walnut mixture.  Bake at 275 degrees for 15 minutes.  Meanwhile, over medium high heat, bring water and sugar to a boil.  Once boiling, reduce heat and simmer until sugar has dissolved.  Add lemon juice and let cool.  Remove baklava bites from the oven and pour cooled sugar syrup over top.


A little sweet treasure in a cup to satisfy your sweet tooth...keep brushing those teeth though.  Just a little service announcement from your family dentist.  Ha!

Eggs Continental Muffins

Hello there!
It's good to see you!
The birds have been chirping and the sun has been shining.  
Spring has been trying to muscle it's way in and with Easter around the corner, I thought I would share my absolute favorite egg casserole.  I have shared it before, but this time I took the same recipe and made it in a muffin tin to make individual servings of my favorite egg casserole.



It all starts with a whole wheat bread bottom and is topped with a hard boiled egg mixture followed by melted cheese!





Ingredients to make 1 dozen:
5 hard boiled eggs
1 2.8 ounce package of bacon bits
4 slices of whole wheat bread
3/4 cup sour cream
1 green onion, chopped
salt and pepper to taste
1/2 cup shredded cheddar cheese
non-stick spray
Directions:
Preheat oven to 375 degrees.  Spray a muffin pan with non-stick spray.  Slice the bread into small square pieces.  Place bread squares into each prepared muffin tin.  Press down.  Chop up the hard boiled eggs.  In a large bowl, mix together chopped, hard boiled eggs, bacon bits, sour cream, green onion and salt/pepper to taste.  Add the mixture on top of the bread.  Top with the shredded cheddar cheese and bake at 375 degrees for 15 minutes.  Let sit for 5 minutes in pan, remove and serve warm.


Grab a cup of coffee or cup of tea because you are going to want a couple!

Princess Inspired Treats

Having two girls, we were BIG into fairy tales.
Dress up clothes, movies, books and little figurines could be found throughout our "castle."
Last week, while my college girl was home, her high school sister and I decided we just HAD to see the new Cinderella movie!  Well, we absolutely loved it!  You are never, ever too old for fairy tales!  So to celebrate our love of fairy tales, here are some Princess Inspired Treats.

Lil' Krispy Bunny Treats

I am a few short hours away from celebrating Spring Break #2.
College girl was home a week ago and we had fun "playing" around town and high school girl's Spring Break begins shortly.  More fun planned for Spring Break #2!
We are mostly having a "stay"cation, but we will be visiting a couple of colleges around the Midwest since my high school girl will be a senior...the last one to fly out of the nest.
Anyhow, it's always fun to be out of the routine and hanging with my favorite "girlfriends" and of course spending time with the hubby too.  If you are on Spring Break, I hope you are having a blast whether you stayed home or traveled somewhere!  

With Easter just over a week away, here's a fun little treat!
Lil' Krispy Bunny Treats
for the Easter baskets, the dessert table or goody bags to hand out to friends and family!


Lil' Krispy Bunny Treats aren't made with just krispy rice.  Nope, they have Fruity Pebbles!


The Fruity Pebbles give those Lil' Bunnies a fruity flavor!
Besides, they are such a colorful little treat!.


Grab your favorite bunny cookie cutter or any Spring/Easter shape to
make some fun Lil' Krispy Treats!

Ingredients:
1/2 cup unsalted butter
1 10.5 ounce bag of mini marshmallows
3 cups krispy rice cereal
3 cups fruity pebble type cereal
Directions:
Melt butter over medium high heat.  Turn down heat to medium low and add marshmallows.  Stir until melted.  Mix in the cereals.  Line an 8 x 8 pan with waxed paper.  Firmly press the marshmallow mixture into the waxed paper lined pan. Refrigerate for 1 hour.  Lift the marshmallow mixture out of the pan.  Use a cookie cutter to punch out your shapes.

Lemon Chick Cookies

This weather in the Midwest is killing me!
Yes, I am being over dramatic but I can't take it anymore!
So how about something fun and whimsical?


These cute little lemon chick cookies just put a smile on your face!

Leave them as plain lemon cookies or jazz them up for Easter, either way they are a wonderful soft lemon cookie.



Dusted with powdered sugar or....



turned into little chicks!

Ingredients to make 2 dozen:
1 pkg of lemon cake mix
2 eggs
1 tsp lemon extract
1/3 cup vegetable oil
powdered sugar
edible eyes (from the craft store)
white tube frosting
orange tube frosting
yellow tube frosting
Directions:
Preheat oven to 375 degrees.  In a large bowl, mix together lemon cake mix, eggs, lemon extract and vegetable oil until well blended.  Drop by rounded teaspoonfuls onto an ungreased cookie sheet.  Bake for 6-7 minutes at 375 degrees or until edges turn light brown.  Remove to a wire rack to cool.
To decorate:
Choice 1 - use a sifter to dust cookies with powdered sugar
Choice 2 - decorate with prepared frosting.  
                    use white frosting to stick down edible eyes
                    use orange frosting to create a beak and yellow frosting to create wings and chicken feet
Too cute!

Lime Chicken Chopped Salad with Creamy Cilantro Lime Dressing

Boy has March been a crazy weather month.  It's supposed to come in like a lion and out like a lamb right?  The Chicago area has experienced the opposite.  Not so bad at the beginning, some teasing Spring days and then BAM...winter made an ugly, unwanted return.  But today there's been some relief.  Is winter officially over?  I am afraid to call it!  Last time I declared it over and walked my boots down to the basement...4 inches of snow...yuck!
Let's think of something pretty with lots of color to it!

How about...
Lime Chicken Chopped Salad with Cilantro Lime Dressing


Is that pretty or what!
So colorful and the best part?  The Home-made Creamy Cilantro Lime Dressing!


This chopped salad has Grilled Lime Chicken, corn, jasmine rice, chopped lettuce, chopped tomato, shredded Monterey Jack cheese and avocado.


The grilled lime chicken is so tender and tasty...


But, here's the real star of this chopped salad!



Creamy Cilantro Lime Dressing!


Ingredients to make grilled lime chicken:
2 chicken breasts
1/4 cup olive oil
1 1/2 Tbsp lime juice
1/2 tsp red pepper seasoning
1/2 tsp lime zest
Directions:
Mix together olive oil, lime juice, red pepper and lime zest.  Toss chicken breasts in the juice.  Marinade for 20-30 minutes.  Grill chicken over a medium hot grill for 15-18 minutes or until chicken is no longer pink.  Set aside and slice after 5-8 minutes.
Ingredients for chopped salad:
corn
shredded lettuce
1 cup Monterey Jack cheese, shredded
chopped tomatoes and avocado
2 cups cooked jasmine rice
Ingredients for Creamy Cilantro Lime Dressing:
adapted from The Garden Grazer
1/2 cup fresh chopped cilantro
3/4 cup plain Greek yogurt
2 Tbsp mayo
1 Tbsp fresh lime juice
1 Tbsp minced garlic
1/4 olive oil
salt to taste
Directions:
Add all the ingredients for the dressing into a small food processor.  Pulse until blended.  Add more salt until desired taste.  Pour dressing over salad.

So fresh!
I know, I know...Spring will be here to stay eventually.
