When I was a little girl living in Florida, we had an orange tree out back.
I used to pick oranges off the tree and stick in this pastic gadget that allowed me to suck out the juice from the orange. Talk about fresh orange juice! Oh my gosh! So good! Besides, how fun is it to drink out of an orange? Makes things soooo much better! No orange trees up here in my neck of the woods, but I have something almost as good. So tasty and just as fun...
Orange Meringue Tarts
Orange Meringue Tarts are these little bursts of Florida sunshine!
Filled with a sweet orange flavor and topped with meringue, they are a yummy bite of citrus!
I love all things mini and using what is in season...seasonal simplicity!
Lots of oranges in our grocery store, so that's what I want to use to
create something sweet and fun.
So...Orange Meringue Tarts...
Really easy to make and mini? What more could you ask for?
A fun little dessert for your family or to take to your next book club.
Just sharing a little bit of sunshine!
Ingredients for 30 mini tarts:
2 egg yoks
1/3 cup sugar
1 Tbsp flour
1/2 Tbsp melted butter
1/2 cup orange juice
1 Tbsp orange zest
2 pkgs 15 baked mini phyllo shells
Ingredients for meringue topping:
2 egg whites
3 Tbsp sugar
1 Tbsp orange zest
Directions:
Preheat oven to 375 degrees.
Beat 2 egg yolks. Add sugar, flour, melted butter, orange juice and orange zest. Beat all together until well incorporated. Place mini phyllo shells onto a cookie sheet. Pour orange mixture into mini phyllo shells. Bake at 375 degrees for 15 minutes. While tarts are baking. Beat 2 egg whites, sugar and orange zest until stiff peaks form, approximately 7-10 minutes. After 15 minutes of baking the tarts, place 1 tsp of the stiff peaked meringue onto the top of each tart. Turn oven to broil and broil for about 1-2 minutes. Watch carefully! Cool. Serve or store in refrigerator.
Those little phyllo shells hold this wonderfully, sweet orange flavor topped with a little pillow of air!
It's amazing how these little Orange Meringue Tarts can brighten your day, especially when it is a Monday and it's winter.
