White Aged Cheddar Reuben Dip

In the last couple of weeks, I have become the BIGGEST
corned beef fan!  I don't like it just plain on the plate, but as an ingredient in a recipe?
Absolutely looooove it!

Now, I know a Reuben is technically not Irish.  But, isn't a Reuben made with corned beef?  I say we count it as Irish!  So grab your favorite stout and check this out!

1 Tbsp unsalted butter
8 ounces shredded white cheddar cheese
1/4 cup chopped corned beef (4 deli slices of corned beef)
1/4 cup drained sauerkraut, drained
4 ounces plain cream cheese
1 Tbsp Thousand Island dressing
Preheat oven to 350 degrees.  In a oven proof dish, place in butter.  Top with shredded white cheddar cheese, chopped corned beef, drained sauerkraut, cream cheese and Thousand Island dressing.  Place in the oven and bake for 17-20 minutes or until bubbly.  Stir halfway through.  Serve hot with your favorite crackers and Irish beer!

The flavor is incredible!  You will dip cracker after cracker after cracker!
