Creamy Chicken Pasta with Sun Dried Tomato

Chicken is a staple in our house.
If it is in your house too, it's always good to have a few chicken recipes up your sleeves and this one is sure to please!

Creamy Chicken Pasta with Sun-dried Tomato
looks fancy!  
You'll be surprised as to how easy it is to throw together!

Start with some cooked, shredded chicken.  Boil the chicken breasts and then shred them or you can use a package of cooked chicken breast pieces.

2 Tbsp minced garlic
1 6.5 ounce sun-dried tomato in olive oil
2 cups cooked, shredded chicken
3 cups cooked mostaccioli or penne pasta
1 cup half and half
1 cup fresh, shredded Parmesan cheese
1 Tbsp basil
1 tsp salt
1 tsp red pepper flakes
Boil pasta.  Reserve 1/2 cup pasta water before draining the pasta.
Drain sun-dried tomatoes, but reserve 1 Tbsp of the oil.  Saute sun-dried tomato oil and 2 Tbsp minced garlic until fragrant, about 2-3 minutes.  Add cooked, shredded chicken.  Saute an additional 2-3 minutes.  Toss in cooked pasta.
Add the half and half,  3/4 cup Parmesan cheese, basil, salt and red pepper flakes.  Add pasta water.  Stir to coat and serve with remaining fresh, shredded Parmesan sprinkled on top.

The flavor of this pasta is oh sooo good!
It's creamy and has just a hint of a kick from the red pepper flakes.
I love it and it is on my dinner rotation!
