Do you avoid stepping on cracks because it is bad luck?
Do you avoid going underneath ladders for the same reason?
What about throwing salt over your shoulder to erase any bad luck?
What about clovers? Ever seen a patch of them and searched for one with 4 leaves?
I looked into what kind of luck comes from finding a 4 leaf clover, should I find one.
Apparently, a person who finds one will meet a future lover on the same day, have good luck, enable you to see fairies and if you pass it on...your luck will double!
Wow! Who knew? I guess I need the rest of the snow to melt and the grass to green before I can even start my search...sounds too tedious to me. So, Plan B!
A No Bake Mint Cheesecake Parfait is soooo delicious! Your family will feel like they are the luckiest family on Earth...at least on St. Patrick's Day and no 4 leaf clover needed!
You will feel lucky because this is another super simple recipe!

Light mint cheesecake layers with crumbles of chocolate mint cream sandwich cookies?
2 8 ounce blocks of cream cheese
2/3 cup sweetened condensed milk
1/4 tsp mint extract
2 cups heavy whipping cream
1/4 cup powdered sugar
1 package of mint cream sandwich cookies
chocolate jimmies, reserved cookies, gray nonpareils
Blend cream cheese, sweetened condensed milk and mint extract until well combined. In a separate bowl, whip heavy whipping cream and powdered sugar until stiff peaks form. Fold the whip cream mixture into the cream cheese mixture.
Break up the mint cream sandwich cookies into smaller chunks. Reserve some whole ones for the top. Layer the cream cheese mixture followed by cookie crumbles and then more of the cream cheese mixture. Top with a whole mint cream sandwich cookie and sprinkles. Store in the refrigerator until ready to serve.
