Double Dipped Mint Shortbread Cookies

With St. Patrick's Day less than two weeks away, it's time to start sharing some sweet treats...
starting with...


Double Dipped Mint Shortbread Cookies
are so minty good.  These minty shortbread cookies are dipped on each end.  One side in semi sweet chocolate and the other in white chocolate.  It will be so hard to decide which side start at!
Start at the semi-sweet chocolate end?
Or, munch on the white chocolate end first?
Maybe just start in between and get a little bit of both chocolates!
Sounds like you will need to try all the ways!  But first you need to bake 'em so you need a recipe of course. Here ya go...

Ingredients:
1 cup sugar
1 cup butter, softened
1 egg
2 2/3 cup flour
1/4 tsp salt
1 1/2 tsp mint extract
10 drops of green food coloring
3/4 cup semisweet chocolate chips
3 Tbsp whipping cream
3/4 cup white chocolate chips
3 Tbsp whipping cream
green sprinkles
Directions:
Preheat oven to 375 degrees.  In a large bowl, cream together sugar and softened butter until light and fluffy.  Beat in the egg and then add the mint extract.  Slowly mix in the flour and salt.  Once well combined, add the 10 drops of green food coloring.  Roll the green dough into 1" balls and flatten with a glass.  Place cookies on an ungreased cookie sheet.  Bake for 10-12 minutes.  Remove from cookie sheet and cool on a wire rack.  Once cookies are cooled, place semi sweet chocolate chips and 3 Tbsp whipping cream in a microwave safe bowl.  Cook for 30 seconds on high.  Stir and repeat until chocolate is melted.  Dip one end of mint shortbread cookies into the semi sweet chocolate.  Place back on wire rack to dry.  Once dry, place white chocolate chips and 3 Tbsp whipping cream into a microwave safe bowl.  Cook for 30 seconds on high.  Stir and repeat until chocolate is melted.  Dip the other end of the mint shortbread cookies into the white chocolate.  Sprinkle green sprinkles on white chocolate while wet.  Let dry.
