Not really an Irish recipe at all, but the Reuben gains the spotlight during the St. Patrick's Day season.
Reuben Hye Rollers are made with corned beef, either leftover from your St. Patrick's Day meal or just bought from the deli.
Ingredients per roll up:
1 spinach tortilla
2 slices corned beef
2 Tbsp cream cheese
2 slices Swiss cheese
1 Tbsp brown mustard
1 Tbsp Thousand Island dressing
1/4 cup sauerkraut, drained
Lay out 1 spinach tortilla. Spread on cream cheese. Top with corned beef, followed by brown mustard, Swiss cheese, Thousand Island dressing and drained sauerkraut. Tightly roll up to form a tube. Wrap in plastic wrap and refrigerator for 20-30 minutes. Cut into 1/2" to 3/4" slices.
I just love all the flavors all rolled up into one!
Great for dinner, for lunch or with an Irish beer!
The best part is that you really don't need to wait until St. Patrick's Day to enjoy all the flavors!
