Tea time has always held a special place in our hearts...
a time to catch up over tea without rushing...
it's a process and a way to slow down and reconnect with my girls, regardless of their age.
So this year, I decided to go all out! A Mother's Day Tea with my FAVORITE Girls!
We had savory and sweet, but today I will share the sweet part of tea time...
Raspberry Petit Fours

I slaved and slaved in the kitchen to make these delectable goodies!!!
OK, you know me to well...always looking for the simplistic and believe it or not...these are!
I was so excited!!! Here's what you need:
3 ingredients!!! Is that crazy or what? You can even buy a pre-made pound cake and skip making it...even simpler! So, you need a pound cake, seedless red raspberry jam and a can of vanilla frosting. That's it!
First you need to slice the pound cake into thin slices and then cut each slice into 1 1/2 inch squares.
Then begin to stack the squares of pound cake. One square down and some red raspberry jam and then another square on top. More jam and then a final square of pound cake.
Now take each square and cut them in half.
Now you have little petit four sized "sandwiches." You don't have to be perfect! See how mine are? Not perfection at all. That's where the icing comes in.
Take the lid and foil liner off your canister of icing. Place in a microwave for 30 seconds on high. Give it a stir and return it to the microwave for an additional 30 seconds. Now the icing should be pourable.
The petit fours should be placed on a sheet of waxed paper. Pour the frosting liberally over each. Make sure all sides are covered. Let sit for about 10-15 minutes so that the icing becomes more firm. Then transfer to a serving plate. I made about 18 petit fours and still had some leftover pound cake. I just threw that in the freezer for a later use.
Oh my goodness! These taste so good! The frosting is delicious and the red raspberry layers are a great combo. Add some edible flowers and you will get the WOW factor!
