Cinnamon Roll Pretzel Mix

So what do you see?
Do you see white and gold or black and blue?
I couldn't resist!
You have heard about the controversy over the color of a dress that was posted on Twitter, right?
If not, let me fill you in...
In a nutshell, some saw the dress with the colors of white and gold while others looked at the same dress and saw black and blue.  Crazy!  Google it and check it out for yourself.  I still don't quite understand the explanation as to why it is seen differently...something about how we process things in our brain.  Anyhow, regardless of what colors you see in the above foodie picture, you should see yummy goodness!
Cinnamon Roll Pretzel Mix
 is just about the best treat ever!
All the flavors from a cinnamon roll covering pretzel twists, making this snack mix totally addicting!


Sugar, spice and everything nice?
That's what Cinnamon Roll Pretzel Mix is made of!

Ingredients:
1/3 cup brown sugar
1/2 tsp cinnamon
1 egg white
4 cups pretzel twists
4 2ounce squares white chocolate baking bar
2 Tbsp whipping cream
white nonpareil sprinkles
Directions:
Preheat oven to 275 degrees.  Line a shallow baking dish with parchment paper.
Combine brown sugar and cinnamon in small bowl.  In another bowl, whisk an egg white.  Place the pretzel twists in a large bowl.  Pour egg white over top and toss to coat the pretzels.  Sprinkle on the cinnamon sugar mixture, tossing to  cover pretzels.  Spread coated pretzels onto the parchment lined baking dish.  Place dish into a 275 degree oven.  Bake for 45 minutes, stirring at 15 minute intervals.  Remove from oven.  Place on a new sheet of parchment paper to cool.  Once cooled, melt white chocolate and whipping cream over medium low heat.  Once melted, drizzle on top of sugared pretzel mixture.  Sprinkle of white nonpareil sprinkles.


You might want to hide this snack mix after you make it.  
It won't last long and you will want a stash for yourself!

Bacon Ranch Mac n Cheese

The 15th Polar Plunge is this weekend in Chicago!
I can't believe I have lived here 22 years and have never participated.
What have I been thinking?  Well, let me tell ya...
Jumping into Lake Michigan in the Summer can be a wee bit chilly, but taking the plunge when over 80% of Lake Michigan is frozen and the air temperatures are below 10...couldn't do it unless I was being chased by a crazed yeti and that was my only way to escape.  Even then, I may just wave a white flag and let the yeti eat me.  Now you know why I have never participated. I have to say, The Polar Plunge is for a wonderful cause.  Last year Jimmy Fallon took a dip and this year Vince Vaugn will take the plunge.  It's being referred to as #Vinnydippin.  Very, very clever!  But, I still couldn't do it unless there was a yeti involved.  Kuddos to those who take the Polar Plunge to support Special Olympics!  Besides, my teeth would be chattering soooo much (they are just thinking about the cold), they'd fall out. 
For those of us who just enjoy staying warm (all of us, right?), 
check out this recipe for mac-n-cheese.
Comfort food with a twist!


Other than cooking some bacon, this is a one pot meal!
Bacon Ranch Mac-n-Cheese
should be on your meal rotation!


Cheesy goodness with bits of bacon and ranch flavor...I love it!


YUM!  Did I tell you I love it?

Ingredients:
4 cups 2% milk
3 cups elbow macaroni
1/4 tsp salt
1 8 ounce block of cheddar cheese, shredded (about 2 cups)
1 6 ounce package of bacon, cooked
2 Tbsp dry ranch seasoning
Directions:
Cook bacon until crispy.  Put cooked bacon on paper towels to pat dry.  Reserve to the side.  In a large pot, put 4 cups of milk, 3 cups of elbow macaroni (uncooked noodles) and salt.  Bring to a boil over medium heat.  Once boiling, cook noodles for 10-15 minutes, stirring frequently to keep milk from scalding.  Once noodles are al dente and most of the liquid has been absorbed, stir in the shredded cheddar cheese, ranch seasoning and crumbled bacon.  Serve immediately.




Sit by a drafty window and let your fork take a polar plunge into this comfort food with a twist!
No yeti needed and teeth stay in your mouth!  Teeheehee!

Thin Mint Chocolate Donuts

St. Patrick's Day is around the corner.
or
It's almost the end of the week.
or
The never ending cold and snow is driving you CRAZY!
Do you really need a reason for these???
Thin Mint Chocolate Donuts
need no reason!
I believe you NEED some, no matter what the reason or lack there of!




Baked chocolate cake donuts dipped in chocolate and topped with crushed thin mint flavored cookies!
See what I mean?
YOU NEED THEM and you don't need a reason!

Ingredients for 18 donuts:
1 cup flour
1/4 cu sugar
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup milk
1 egg, beaten
1/2 tsp vanilla extract
non stick spray
Ingredients for chocolate topping:
1/2 cup chocolate chips
1/3 cup whipping cream
20 mint fudge cookies, broken into small bits
Directions:
Preheat oven to 325 degrees.  Spray a mini donut pan with non stick spray.  In a small bowl, combine flour, sugar, cocoa powder, baking powder, baking soda and salt.  Mix in milk, beaten egg and vanilla extract.  When mixed well, pour into mini donut pan, halfway.  Bake in a 325 degree oven for 10-12 minutes.  Remove from pan and cool on wire rack.
Melt chocolate chips and whipping cream over medium heat, stirring constantly.  Dip donut into melted chocolate and top with broken mint fudge cookies.  


Well there you go.  Baked mini donuts with chocolate on the inside and chocolate on top!
Breakfast has never looked this good!

National Clam Chowder Day

Happy National Clam Chowder Day!
I told you the celebrating hasn't stopped yet!
This recipe is perfect for many reasons, but the main reason is that it is still dang cold and soup helps warm me up!
But you know what, I am trying to focus on the positive, Spring WILL come...I even have my frozen fingers and toes crossed that Spring will come sooner rather than later.
So join me in the promise of Spring and check out this Easy Homemade Clam Chowder.  
By the way...it's a  lighter version.  That'll make you happy, right?


Creamy goodness in a bowl!

Ingredients:
4 small-medium sized baking potatoes, peeled and diced
1 8oz bottle of clam juice
3 cups water
2 6.5 oz can chopped clams, drained but reserve the liquid in a separate bowl
1/2 tsp salt
2 tsp minced garlic
3 cups 2% milk
1/2 cup flour
1/4 tsp pepper
Directions:
In a large pot, pour clam juice, reserved clam juice from drained clams, water, salt, garlic and peeled/diced potatoes.
Bring to a boil.  Reduce heat to low and simmer for approximately 20 minutes or until potatoes are tender.  Combine milk and flour, whisking until smooth.  Add to the large pot.  Bring to a boil.  Cook about 10 minutes until thickened.  Add clams during the last 2 minutes as well as 1/4 tsp pepper.



I had no idea that Clam Chowder could be so easy!  No shucking clams (do you even shuck clams...I have no idea) and made with 2% milk rather than cream.  Win win for all!

Broccoli and Cheddar Mini Frittatas

Have you heard of Dibs?
No, it isn't a candy.  It's when you lay claim to something, like I have dibs on that leftover pizza in the refrigerator.  It's like you are claiming it for yourself and no-one else can touch it.  In our house, calling dibs isn't enough.  You have to actually write your name, in permanent marker, on said item,  possibly even setting a mouse trap on said item.  Well, not really, but I am sure one of us in the house has thought about doing that.  Now that you get the idea of dibs, do you know what dibs is Chicago style?  Dibs is a Chicago tradition.  It's the idea of reserving the street parking space that you have shoveled out after a heavy snowfall.  One marks the spot with just about everything but the kitchen sink, although that may have been used to.  Chairs, strollers, laundry baskets, ladders, religious statues, just about anything you can move is piled into the space to reserve your snow free spot for later.  The idea is that no-one would dare remove your stuff to park their car in the spot.  After all, putting your car there is kind of a giveaway as to who took the spot.  It causes all kinds of upset in the city!  So funny to see all the comical items people use to save the spot.  I totally get it! When you have to shovel to get your car out, you soooo don't want to give it away, so you just call dibs.  Ingenious really!  I am hoping that calling dibs any more this season is over.  Snow be gone!

Here's a really easy mini frittata recipe made in a mini muffin tin.  
You will want to call dibs on these babies!


Mini Broccoli and Cheddar Frittatas are delicious!
Make them for breakfast or dinner!
Or, make them and freeze them.  Just pull them out of your freezer and reheat in the microwave for a fabulous, quick breakfast!  I am thinking you are going to need to call dibs on them the night before!

Ingredients:
butter for mini muffin tin
4 eggs
3/4 cup half and half
1/2 tsp salt
1/4 tsp pepper
1 cup chopped, fresh broccoli
1/2 cup shredded cheddar
Directions:
Preheat oven to 350 degrees.  Butter a mini muffin tin.  In a large bowl, whisk the eggs.  Add half and half, salt and pepper.  Whisk until combined.  Stir in the chopped, fresh broccoli and shredded cheddar.  Fill each muffin cup halfway with the egg mixture.  Bake at 350 degrees for 20 minutes.  Let sit for 5 minutes.  Run a knife around each frittata and lift out.  Serve or freeze for later use.

Each frittata is full of broccoli and cheddar cheese!
No crust, so it's easy on the waistline!
