You made it through the week and are headed into the WEEEEKEND!
So let's celebrate with a slice of
Prosciutto and Arugula Pita Pizza
These personal sized pizzas are made on a pita topped with red onions, arugula and prosciutto, of course. It smells divine while it is cooking, but wait until you taste the combo...as good if not better than it smells!
Ingredients:
4 pitas
1 1/4 cup arugula
2 Tbsp olive oil + oil to brush pitas
1 tsp balsamic vinegar
salt and pepper to taste
1/4 cup red onion, sliced
4-6 slices of prosciutto
1 package Italian style 6 cheese blend
Directions:
Preheat oven to 375 degrees. Brush pitas with olive oil. In a small bowl, mix together arugula, olive oil, balsamic vinegar, salt and pepper. Divide arugula among 4 pitas. Top arugula with slices of red onion and prosciutto. Sprinkle cheese on top. Bake at 375 for 10-12 minutes. Serve.
The pita crust gets crispy and is topped with an explosion of flavors!
