Summer Supper Menu

Yum
Summer entertaining for friends and family calls for a lighter menu!
Need help planning one?  Here's one of our family's favorites.

Starting with a Goat Cheese and Pesto Crostini Appetizer.
Use your own home-made pesto and fresh tomatoes for a perfect way to start this summer meal.

Followed by the main dish, our personal favorite, Chicken Limone.  Light and full of lemon flavor.  Serve over a bed of pasta to enjoy all that lemony sauce.

Pair the Chicken Limone  with a refreshing Creamy Lemon dressed Radish Salad.  Grab some lettuce at the farmer's market and some radishes too.  The Creamy Lemon Dressing helps dress this simple salad up.  Nice and light!

Then, finish off the meal with these fun Orange Meringue Tarts...a perfect way to end the meal.
A bite sized orange flavored dessert with a bit of meringue.  No worries about your waistline on this one, so have a couple!

When it is hot outside, it is hard to think of eating a heavy meal.  This Summer Supper Menu won't leave you feeling heavy.  It's light and just right for summer.  There is plenty of time for comfort food in the winter.  This is comfort food summer style!

Celebrate the little things that make life sweet,
Christine
