Johnny Appleseed Burgers

Since school is coming soon...boo...hiss...I couldn't resist a Johnny Appleseed inspired recipe.


The crunchy apple slice, bacon and roasted red mayo is a great combo on this burger.


This burger is just perfect for those summer days even when school has started.
I just love the sweet red onion mayo!


The Granny Smith apple adds an additional juiciness.  Is that even a word?  And the bacon?  You know everything is awesome with bacon!


Ingredients:
4 slider hamburger buns
12 slices of bacon, cooked
4 slices cheddar cheese or 4 ounces shredded cheddar cheese
4 thin slices of Granny Smith apples
1 1/2 lbs ground beef
1/2 red onion, chopped
1 Tbsp olive oil
salt and pepper
1/2 cup mayo
Directions:
Make the roasted red onion mayo first.  Preheat oven to 375 degrees.  Place chopped red onion into a roasting pan.  Toss with olive oil, salt and pepper.  Roast in the oven for 20-25 minutes.  Remove from oven and cool for 10 minutes.  Place the red onions into a mini chopper.  Pulse until you have much smaller pieces.  Add mayo and pulse until smooth.  Set aside. 
Prepare your burger patties by shaping and seasoning with salt and pepper.  Grill over medium heat until desired doneness.  Top with cheddar cheese slices and finish grilling just until cheese melts.  Remove burger from grill and assemble by topping each burger with a slice of Granny Smith apple, slices of cooked bacon and a dollop of roasted red onion mayo.
