Grilled Prosciutto Bread

Well it sure hasn't felt like summer around here.  Running through the sprinkler or splashing in the pool has not happened too much.  Jackets are on and the craving for hot chocolate is strong! What is going on?  I even noticed a squirrel with a nut in his mouth while he was digging a hole for the nut.  That concerns me.  Why are the squirrels preparing for fall?  Did I sleep through summer?  I am sure hoping that summer will make a return for longer than 24 hours.  In the meantime, I have an appetizer recipe that you can grill indoors or outdoors.
Just add a glass of sweet tea or wine (or a hot toddy if needed).


Grill the thick slices of bread on an indoor or outdoor grill then add the toppings.  Simple yet scrumptious.


Pair it with a salad and it would make a very nice light dinner.


Each grilled bread is topped with garlic, thin slices of prociutto and a smoked mozzarella


Ingredients:
3 cheese Somolina Bread or other crusty round bread
2 Tbsp olive oil
2 tsp minced garlic
2 ounces thinly sliced prosciutto
4 ounces smoked mozzarella, shredded
1 Tbsp green onion, chopped
Directions:
If using an indoor grill, heat grill pan over medium high heat.  If using an outdoor grill, wait until coals have a medium low heat.  In a small bowl, whisk together olive oil and minced garlic.  Set aside.  Slice the bread into 1 - 1 1/2" slices.
Grill each flat side for 2-3 minutes or until grill marks are achieved.  Remove from grill and lightly brush each side with the garlic olive oil.  Top each with torn pieces of prosciutto and shredded smoked mozzarella.  Return to grill for and additional 3-5 minutes until cheese melts (or finish off in a 375 degree oven).


I would love snackin' on Grilled Prosciutto Bread while sitting out on the patio with a glass of wine!  I'll need to grab a blanket before I head outside, but really anytime of the year would be perfect for this appetizer.
