Lighter Chicken Salad

In the event that all the rain stops around here, I am ready to gather my favorite ladies for a lunch out on the porch with some sweet tea and a delicious Lighter Chicken Salad.


I replaced some of the mayo with Greek yogurt.


Then I added some juicy Granny Smith apples in that chicken salad.


Just serve Lighter Chicken Salad in dainty filo shells with a glass of sweet tea.
Just missing your favorite lady friends!



Ingredients:
3 cups cooked, shredded chicken
1 Granny Smith apple, chopped
2 green onions, chopped
1 5.3 ounce plain Greek yogurt
1/3 cup mayo with olive oil
1 tsp salt
1/2 tsp fresh ground pepper
1/2 Tbsp lime juice
3 packages filo shells
Directions:
In a large bowl, mix shredded chicken, Greek yogurt and mayo.  When well combined, add the chopped Granny Smith apple, chopped green onions, salt, pepper and lime juice.  Spoon into filo shells when ready to serve.


You know how I love all things mini!  Sure, you could serve this Lighter Chicken Salad on bread, but you have to admit that serving in the fillo cups is way more impressive!  Kind of takes the ordinary to extraordinary.  I love the addition of the Greek yogurt combined with the sweetness of crisp Granny Smith apple pieces.  

I've got the sweet tea brewed and I am grabbing my absolute favorite ladies, my daughters, for a lunch with Lighter Chicken Salad.
