Gingerbread Muffin Waffles

Making a special breakfast during the holidays is a must!
You can't just wake up on Christmas morning to cereal and toast...well, you could but what fun is that?
Surprise your family with a new Christmas breakfast that they will want every year.  Better yet, make this breakfast THIS weekend.  Turn on the Christmas music and sit by the tree.  Make the morning a memorable one of hanging out with the family because that is what the holidays are all about.  Spending time with those you love and what better way to do that?  Spending time over food!


Oh my gosh people!  
This is such a fun breakfast using one of THE flavors of the season, gingerbread.
Set out a breakfast bar with Gingerbread Muffin Waffles, powdered sugar, vanilla yogurt, granola and your favorite fruit.  I chose raspberries to give them an additional holiday pop!  But, you can put out a variety of fruit and let each person make their own version.




Each mini Gingerbread Muffin Waffle has a slightly crunchy exterior and a moist gingerbread interior.  Topped with vanilla yogurt, granola, fruit and a dusting of "snow" (powdered sugar), it is like eating a cupcake for breakfast which is totally allowed this time of year!  It all starts with a packaged gingerbread cookie mix and a few other ingredients.  Ease for the holidays!


Ingredients to make 4 1/2 dozen:
1 package gingerbread cookie mix
1 cup water
1/4 cup vegetable oil
2 eggs
non-stick spray
vanilla yogurt
fresh fruit
granola
Directions:
Preheat oven to 350 degrees.  Prepare a mini muffin pan with non-stick spray.  In a mixing bowl, combine gingerbread cookie mix, water, vegetable oil and eggs.  Beat until well mixed.  Spoon into a mini muffin pan.  Bake at 350 degrees for 15 minutes.  Remove from oven and pan.  Place each mini gingerbread muffin into a heated waffle maker (approximately 4 at a time).  Press and cook an additional 2-3 minutes.  Remove and serve.  Each mini gingerbread muffin waffle can be topped with vanilla yogurt, granola, fruit and powdered sugar.
