My hubby is the best dad.
He can fix anything, solve every dilemma (pretty calmly I might add), crack all us girls up and just provide this presence that all will be ok. The girls love him to death and so do I.

So let's celebrate the official start of summer and Father's Day with a frozen treat of course!
Cannoli Ice Cream has this addicting flavor and can be made without an ice cream maker.
Imagine the filling in a cannoli...sweet and scrumptious. Now envision that same goodness in frozen form in an ice cream sandwich. I know crazy good right?
I used these mini butter waffle cookies which can be found at Trader Joe's.
So, these Cannoli Ice Cream Sandwiches are mini! I LUV MINI!
Doesn't make me feel too guilty eating just a little indulgent treat!
Cannoli Ice Cream recipe originally from Kraft
1 15 ounce ricotta cheese
1 14 ounce sweetened condensed milk
1/2 cup cold milk
1/4 tsp cinnamon
2 cups whipping cream
2/3 cup mini chocolate chis
1 package butter waffle cookies
additional 1/2 cup mini chocolate chips
In a mixer, blend the ricotta cheese until creamy. Add the sweetened condensed milk, milk and cinnamon. Whip until blended. Set aside. In a separate mixing bowl, beat whipping cream until soft peaks form (approximately 15 minutes).
Fold in ricotta mixture and then fold in 2/3 cup mini chocolate chips. Spoon into a plastic container and freeze 5-6 hours or overnight. Before using, let sit out 10 minutes for easier scooping. Place 1/2 cup mini chocolate chips into a shallow bowl. Scoop cannoli ice cream onto butter waffle cookies to make an ice cream sandwich. Roll edge of cannoli ice cream sandwiches in chocolate chips. Serve immediately or refreeze until ready to use.
