No fire needed to create these s'more cookies!
Chocolate and marshmallow nestled in a sugared peanut butter cookie.
All of my favorite cravings in one.
Each cookie is so tender and moist. An easy s'more coming right out of your oven! Surely they will satisfy any craving!
Ingredients:
1/2 cup shortening
3/4 cup creamy peanut butter
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
2 Tbsp milk
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
additional granulated sugar
1/2 cup semi sweet chocolate chips
1 cup mini marshmallows
Directions:
Preheat oven to 375 degrees.
Beat shortening and peanut butter in a large bowl until well blended. Add sugar and brown sugar. Beat until fluffy. Add egg, milk and vanilla. Beat well.
Combine flour, baking soda and salt. Gradually add to the peanut butter mixture. Beating until all is blended.
Shape dough into 1 inch balls. Roll in granulated sugar and place on an ungreased cookie sheet.
Bake 8-10 minutes or until lightly brown.
Remove from oven and depress slightly in the middle. Add some chocolate chips and a couple of mini marshmallows.
Let sit for 5-7 minutes and remove from cookie sheet to a wire rack to cool.
You can have these cookies done within the hour!
Not bad for a home-made cookie!
