Coconut Key Lime Pie Bites

One of my favorite desserts (actually there are many), is key lime pie.
A bite of key lime pie is like a little tropical taste of Florida.
So, I took my key lime pie recipe and jazzed it up a bit.  Added some coconut and made that favorite pie into mini bites of tropical paradise!


The key lime pie sits on a coconut graham cracker crust and is topped with coconut whipped cream.  Baked in a muffin tin, these bite sized treats are the perfect size.

Coconut Key Lime Pie Bites....loooooooove 'em!


Add a little bit of toasted coconut and some key lime zest...tropical breezes will follow!



Ingredients to make 1 dozen:
1 cup graham cracker crumbs
1 1/2 Tbsp sugar
1 1/2 Tbsp sweetened. coconut flakes
3 Tbsp melted butter
1 Tbsp key lime juice
1 egg
1 egg yolk
1/4 cup key lime juice
3/4 cup sweetened condensed milk
1 cup whipping cream
2 Tbsp cream of coconut
1/2 cup toasted coconut
graham cracker crumbs and key lime zest for toppings
Directions:
Preheat oven to 350 degrees.  In a bowl, mix together 1 cup graham cracker crumbs, 1 1/2 Tbsp sugar, 1 1/2 Tbsp coconut flakes, 3 Tbsp melted butter and 1 Tbsp key lime juice.  Press graham cracker crumb mixture into a muffin tin to form crusts.
In another bowl, beat 1 egg and 1 egg yolk.  Add key lime juice and sweetened condensed milk.  Beat well.  Pour over crusts.  Bake at 350 degrees for 3-4 minutes or until firm.  Remove from oven and let cool 5 minutes before removing from muffin tin.  Run a knife along the edge and then lift out.  Cool on a wire rack.
Beat whipping cream and cream of coconut until stiff peaks form.  Top each key lime pie with coconut whipped topping.
Sprinkle with toasted coconut and key lime zest.  Refrigerate until ready to serve.
