Grilled Chicken Pita Salad

If you could see me, my hand would not be up!
Even though it seems like it will be awhile before it's warm enough to wear a swim suit, time is ticking!  While I won't probably be wearing a bikini anytime soon...or ever...I do need to get in better shape and lose some of that winter bulk.  Nope, can't blame the bulky look on sweaters, it's all me.  So, this time of year I like to include a main dish salad once a week.  Salads as the main dish not only taste great, but they are awesome on the figure!

Grilled Chicken Pita Salad is made with deliciously grilled chicken, grilled pita bread and a wonderful tzatziki dressing made with Greek yogurt!  I think your internal bikini girl might just start drooling, don't you?




A bed of arugula and shredded iceberg is the perfect base for the Greek marinated chicken.


I have to say, once again, my favorite part is the dressing!
A tzatziki dressing that is not only a perfect salad dressing but also a delicious dip!

Ingredients for chicken marinade:
1 cup plain Greek yogurt (nonfat)
3 Tbsp oregano seasoning
2 Tbsp minced garlic
juice from 1 lemon
1/2 tsp red pepper flakes
4 skinless, boneless chicken breasts
salt and pepper to taste
Directions:
In a large bowl, combine the Greek yogurt, oregano, minced garlic, lemon juice and red pepper flakes.  Place chicken into the mixture and marinate in the refrigerator of 10-12 hours.    Prepare an outdoor grill.  Remove chicken from yogurt mixture.  Wipe off mixture to prevent burning on the grill.  Season chicken with salt and pepper.  Grill over medium hot coals until chicken is no longer pink.
Ingredients for Tzatziki Dressing:
1 cucumber, seeded
2 tsp salt
2 cups plain Greek yogurt (nonfat)
1/4 cup lemon juice
1 Tbsp dill
2 tsp minced garlic
fresh ground pepper
Directions:
Shred the cucumber.  Place shredded cucumber in a bowl, add the yogurt, lemon juice, dill, minced garlic and fresh ground pepper.  Stir to combine and refrigerate for 1 hour.
Assembling the salad:
arugula
shredded lettuce
grape tomatoes
feta cheese
pitas
grilled chicken, sliced
Tzatziki dressing
Use arugula and shredded iceberg as the base.  Top with sliced, grilled chicken, grape tomatoes, feta cheese and some grilled or toasted pitas.  Add the dressing and toss.


The pitas are kind of like your croutons.
The whole "thang" is very refreshing.
I bet you'll be in a bikini before you know it!
