As the weather gets colder and the food becomes heartier,
I still love having salad as a main dish for dinner. What's even better is
having it for lunch the next day. Perfect for eating at your desk when you have
a ZILLION things to do!
Chicken Caesar Pasta Salad
Homemade Caesar Dressing
The combination of salad, pasta and chicken makes it quite the hearty meal.
It's filling but doesn't make you feel heavy. A great idea for all the eating you and I are going to be doing over the next few months! And the best part is that you can make your own Caesar Salad Dressing!

1 9oz pkg Romaine lettuce, chopped
2 cups grilled, sliced chicken
1 5oz pkg Texas toast croutons
4 oz fresh shredded Parmesan cheese
8 oz cooked spiral pasta
Ingredients for Caesar Dressing:
1/2 c mayo with olive oil
1/3 cup grated Parmesan Cheese
1/4 cup lemon juice
2 Tbsp olive oil
1 tsp Worcestershire sauce
2 tsp minced garlic
salt and fresh ground pepper to taste
Toss together chopped Romaine lettuce, grilled chicken, croutons, Parmesan cheese and cooked spiral pasta in a large bowl.
In a smaller bowl, whisk together all the ingredients for the Caesar Dressing. Pour over salad combo.
See? Now you can keep those six pack abs even if they are hidden under a coat and many more layers!
