Grasshopper S'more Bites

Who doesn't like a s'more?
Warm marshmallow and melted chocolate with graham crackers...how could someone not like it?
I even used to pack s'more fixin's in the girls' elementary school lunches.  A graham cracker, a large marshmallow and a small piece of chocolate.  Much better than just a plain ol' chocolate chip cookie, right?  Although now they have "fond" memories of receiving comments like, "where's your campfire?" from their sweet mannered table-mates.  They have both claimed that they need therapy today from the teasing they received about their lunchtime s'mores.  I told them to send me the bill!  Ha! Ha!  There will be no teasing about these s'mores!



Grasshopper S'more Bites have all those traditional s'more ingredients with a twist!  Each little bite contains a mint patty instead of a plain ol' piece of chocolate.  That same melted marshmallow oozes out and over a graham cracker crust.  Made in your oven, Grasshopper S'more Bites can be eaten warm or saved for later to take on a picnic or just kept in your kitchen for satisfying those s'more cravings.

Ingredients:
2 cups graham cracker crumbs
1 1/2 sticks of butter, melted
24 chocolate covered mint patties
12 large marshmallows
Directions:
Preheat oven to 350 degrees.  In a large bowl, mix together graham cracker crumbs and melted butter.  Press graham crackers into a muffin pan.  Reserve 1/4 cup of buttered graham cracker crumbs to the side.  Place the muffin pan into the oven and bake the graham cracker crust at 350 degrees for 5 minutes.  Remove from oven and turn off oven.  Place a mint patty into each graham cracker filled muffin cup.  Top each with a large marshmallow.  Return to oven for 5-6 minutes (the oven is still warm enough to melt the marshmallow).  Remove from oven and press marshmallow down slightly.  Add another mint patty to the top of the marshmallow.  Sprinkle with the reserved graham cracker crumbs.  Let the Grasshopper S'more Bites remain in the muffin pan for 20- 30 minutes before removing.  Serve or store in a sealed container.


Having this in your lunchbox?  No way is there going to be teasing going on.  Besides, no campfire needed!  Grasshopper S'more Bites are fabulous on a picnic or at the end of a barbecue.  I even ate one for breakfast!  (Now that is one for therapy...desserts for breakfast.  It was just calling out to me!)
