Pound Cake S'more Slice

It's a Monday...
We are almost in full school year swing.
Back to routine...college girl has left, I am back at work full time and high school girl has started extracurricular activities.  Seems like summer is coming to an end.  Depressing, huh?
Not so fast, there is a bright spot to this Monday.
You know why?
It is National S'mores Day!
Now if that isn't a reason to turn around this Monday!



Not only is this an ooey gooey s'more that can be made in minutes, but it takes just 3 ingredients and yep, just 15 minutes to make.
My Monday is looking better by the moment!



The secret is to start with a pre-made pound cake.  If you want to make your own, by all means, knock your socks off.  I wanted something super quick and easy.  So my recommendation?  Start with a pre-made pound cake from the bakery section of your grocery store.



Ingredients:
1 loaf of pound cake, cut into 1/2" slices
2 cups mini marshmallows
3/4 cup chocolate chips
Directions:
Heat an indoor grill or saute pan with grill marks to medium high heat.  Place 1/2" slices of the pound cake onto the preheated grill.  Grill 1-2 minutes per side.  Remove slices and place on a baking sheet.  Preheat oven to 325 degrees. 
Top each grilled slice of pound cake with mini marshmallows and chocolate chips.  Bake for 7-8 minutes.  Serve warm.


I have to tell ya...my Monday is really turning around.  Thank goodness it is National S'mores Day!
Otherwise I may have been snacking on a salad rather than a warm marshmallow-chocolate covered grilled piece of pound cake!
