Happy Sunday!
While you are reading the Sunday paper and drinking your morning coffee, know that I have your dinner plans tonight. This was our dinner last night and it was so good, I couldn't wait to share it with you.
Based on a recipe from Southern Living, the chicken is seasoned and grilled to perfection. Then each chicken cutlet is topped with a White BBQS sauce. If you haven't had this White BBQ Sauce, you really need to give it a try. The flavor is such a compliment to the seasoned chicken.
The White BBQ Sauce is thick and creamy with a little kick. You can adjust "the kick" part more or less depending on your tastebuds.
Ingredients for chicken:
1 Tbsp thyme
1 Tbsp oregano
1 Tbsp cumin
1/2 Tbsp paprika
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
4 chicken breasts
Directions:
Mix all spices together. Rub on each side of chicken breasts and let sit 1 hour. Grill over medium high heat until chicken is no longer pink.
Ingredients for white bbq sauce:
3/4 cup mayo
1 Tbsp white vinegar
1 Tbsp minced garlic
1/2 tsp ground pepper
1/2 tsp dijon mustard
1/4 tsp sugar
1/2 tsp salt
1/4 tsp creamy horseradish (you can add more if you want more of a kick)
Directions:
Stir together all the ingredients. Store in refrigerator until chicken is done. Serve on grilled chicken.
