Grits a YaYa

I mentioned before that we took a summer trip to the beach.
We travel frequently to Seaside, Florida and always have our favorite restaurants by the beach.  
The Great Southern Cafe is one of our favorites and has a fantastic menu!  
Each time we go, I just have to order the same thing...Grit A YaYa.  It never ever disappoints.  Shrimp, applewood-smoked bacon, spinach on a creamy bed of smoked Gouda cheese grits.  Is that heaven or what?  What's even more exciting is that I found the recipe to make it at home!!!





Ingredients:
4 cups fat free chicken stock
2 1/2 cup heavy cream
1 cup grits
4 Tbsp butter
1 cup smoked Gouda cheese, shredded
1 Tbsp minced garlic
1 Tbsp minced shallots
splash of white wine
1 pound uncooked, peeled and deveined shrimp
4 strips cooked apple smoked bacon
2 1/2 cups spinach
Directions:
To make the grits, bring chicken stock to a boil.  Stir in 1/2 cup heavy cream, 1 Tbsp butter, smoked Gouda cheese and grits. Cook until thickened.  Remove from heat and set aside.  In a large saucepan over medium heat, saute 1 Tbsp minced garlic, 1 Tbsp minced shallots, 3 Tbsp butter and white wine.  Add peeled and deveined shrimp.  Cook for 3-5 minutes.  Remove the shrimp from the saucepan.  Stir in 2 cups of heavy cream.  Cook over medium low heat until slightly reduced.  Add the spinach and cook until just wilted.  Return the shrimp to the saucepan and add the cooked bacon.  Stir shrimp mixture into grits. 
Serve warm.


What a decadent dinner!  Now I can have it at home anytime I want and you can too!
The smoked Gouda cheese adds so much flavor to the grits and shrimp!
