Berry Chopped Salad with Sweet Poppyseed Dressing

College girl has been done with Spring semester for weeks now while the other members of the household have still been in "school-work" mode.  But, now I have joined The School's Out for summer group!  By day I work at a school.  Blogging is my late afternoon, evening and crack of dawn job.  Now that school is over, I can focus on the blog all day long...well, in between catching some summer rays.  The youngest has four more days of school before she too can join the School's Out for summer gang...those pesky snow days.  I'll have to still head in to work to keep up with new students coming to the school and those transferring out, but that schedule is super flexible and just hours here and there.  So get ready, because I have lots and lots of yummy recipes coming your way.  Before you head off to the pool, grab your smart phone to check out all the new A Sprinkle of This and That recipes and peruse through past posts...you may have missed a good one!  Keep one eye on the kiddos in the pool and the other eye on the blog.  Are you ready?  Let's start things off with a fabulous salad!



Berry Chopped Salad is full of all kinds of flavor and textures then it is topped with the sweetest home-made Poppyseed Dressing.  It's addicting!  How awesome is that to have an addicting salad!


The dressing is to die for and just perfect for bringing with you on a picnic.


The colors and flavor!  The dressing is so sweet and a perfect compliment to the berry and spinach combo.  You will want forkful after forkful for sure!


Ingredients:
1 bag fresh spinach, chopped
2 cups hearts of Romaine, chopped
1/2 a red onion, sliced
4 ounces Gorgonzola cheese crumbles
1 cup blackberries, halved
1 cup strawberries, quartered
1/2 cup walnuts
1/3 cup vegetable oil
1/4 cup powered sugar
1 Tbsp cider vinegar
1/2 tsp salt
2 Tbsp honey
1 Tbsp poppy seeds
1 Tbsp mayo with olive oil
Directions:
In a large bowl, toss chopped spinach, chopped Romaine lettuce, red onion slices, Gorgonzola cheese crumbles, blackberry halves, strawberries and walnuts.  In a small bowl, whisk vegetable oil, powdered sugar, cider vinegar, salt, honey and mayo.  Once whisked well, add the poppy seeds.  Mix until well combined.  Pour over salad.  Keep any leftover dressing refrigerated up to a week.
