It's All About the Cheese

Every wonder about the cheese on your pizza?

Strangely, I do!

What's the first thing that comes to mind when you think of cheese on pizza?

Take a moment.  I really want you to think.

Hmmm...I am guessing you are thinking mozzarella?

That's what I usually think, but then I heard about a St. Louis Style Pizza!

Now, I am not from St. Louis.  I am familiar with New York and Chicago style pizza.  But, I am a pizza lover, so I was game to try it!

St. Louis Style Pizza

It really is all about the cheese!!!







Ingredients

Crust:  (you really need to make the crust to have the described "St. Louis" effect, but it is very easy!)


2 cups unbleached self-rising flour

2 tablespoons olive oil

6 tablespoons water (you can add more water if you haven't reached that pizza dough like consistency)

Topping:
2/3 cup pizza sauce
1 cup shredded sharp white cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded Swiss cheese
dried basil and oregano
  1. Preheat oven to 400°F and lightly grease a cookie sheet.
  2. Make the crust:
  3. Mix the flour, oil, and water together.  Use your hands to gather it together and form into a ball. 
  4. Cover with saran wrap and allow to rest 10 minutes to make for easier rolling
  5. Grease a piece of wax paper and set the circle of dough in the middle. Cover with another lightly greased piece. Use a rolling pin to roll the dough very thin - 1/8 inch or less.
  6. Place the dough onto the prepared pans. Top the pizza with 1/3 cup of the sauce.
  7. Mix the shredded cheeses together and sprinkle over the top of the pizza, then season with basil and oregano.
  8. Bake the pizza for 9 to 12 minutes or until the cheese is melted with a few golden brown spots and the edges/bottom of the crust are golden brown.
  9. Remove the pizzas from the oven and let set 5 minutes. Transfer to a cutting board, cut and serve immediately.

St. Louis Style Pizza

I cut my pizza into triangles.  Why?  Just felt like it!  I know, that isn't the midwestern way...
Anyway, the mixture of mozzarella cheese with swiss cheese and white cheddar is wonderful!  You may not want to go back to regular ol' pizza after this!

It IS all about the cheese!
