Peanut Butter Chocolate Valentine Cookies

Peanut butter and chocolate are two peas in a pod.
These cookies incorporate both and are a wonderful afterschool snack!


The Chicago area just finished another round of snow, The Blizzard of 2015.  It was beautiful the way the snow stuck to the trees, but it took rounds and rounds of shoveling to clear the driveway and sidewalks...5 to be exact...not that I was counting.  5th snowiest snow storm in Chicagoland history calls for a lot of shoveling.  Any whoooo...wouldn't it be absolutely fabulous to have a warm delicious cookie to come home to after school or after shoveling snow or after a long bout of carpooling ?
Hands please...I thought so.


A warm peanut butter chocolate chip cookie with a chocolate covered marshmallow totally satisifies that craving for chocolate and peanut butter.  Yep, love...true love.


It's almost like a s'more.
The marshmallow is slightly melted and provides that yummy and gooey flavor you get when you have a s'more.  Swooning!!!  Let me share the recipe with ya.

Ingredients for 2 dozen cookies:
1/2 cup sugar
1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup peanut butter
1 tsp vanilla extract
2 Tbsp milk
1 egg
1 3/4 cup flour
1 tsp baking soda
1/3 cup mini chocolate chips
2 pks heart shaped chocolate covered marshmallows (Russell Stover)
Directions:
Preheat oven to 350 degrees.  In a large bowl, cream together sugar, butter and brown sugar.  Once creamy, add the peanut butter, vanilla extract and milk.  Once combined, add the egg and mix until completely incorporated.  Combine flour and baking soda in a small bowl.  Mix the flour into the peanut butter mixture.  Roll dough into balls.  Place on an ungreased cookie sheet.  Flatten with a glass.  Bake for 10 minutes at 350 degrees until golden brown.  Remove from cookie sheet and place an unwrapped, heart shaped chocolate covered marshmallow in the center of each cookie.  Cool.


Grab a glass of milk!
