Cornbread Waffles and Chili

Yum
If this doesn't say tailgating...
Cornbread in the form of waffles with a beanless chili?
I am thinking a football feeding frenzy may ensue!!!

Premake your cornbread waffles and your chili.  Just assemble when it is game time.
Now you may be saying, whoa, whoa, whoa...back up.  Beanless Chili?
I know you have heard of meatless chili, but beanless?  Hmmm...
The girls and I (much to my husband's dismay) are not fans of the bean.  Maybe it was all the sayings about "Beans...Beans...They are good for the heart; the more you eat, the more ya need to..."  I know, I'm 12.  Who knows?  We are ladies after all.  :)  Anyhow, I needed to come up with a chili that didn't have beans.  So there you go!  My husband absolutely loves this chili and doesn't miss the beans at all.  Serve over cornbread waffles and TOUCHDOWN, you've scored!

Ingredients:
1 lb ground beef
2 Tbsp minced garlic
1 cup tomato sauce
1 14.5 oz can stewed tomatoes
1/2 cup chopped onion
1 red pepper, chopped
1 green pepper, chopped
3 Tbsp cornmeal
3 Tbsp onion powder
1 tsp cumin
1/2 tsp oregano
2 tsp chili powder

Directions:
Brown meat and drain.  Stir in beef and all the other remaining ingredients into a slow cooker.  Let simmer on low for 2 1/2 to 3 hours.  Serve with sourcream, shredded cheddar cheese and French fried onions.

The chili is packed with flavor!  The best part is that as it simmers in your slow cooker, the seasonings just meld together and form this wonderful chili!

As for the cornbread waffle.  Just pick up a box of Cornbread Mix.  Make according to package instructions and cook in your waffle maker.  The cornbread waffle combines perfectly with the chili...kind of like it's plate!

Celebrate the little things that make life sweet,
Christine
