Mini Cherry Trifles

OK, I'll quit.
Today will be the last post involving cherries.
I just love Seasonal Simplicity...
using what is in season for simple recipes and right now that is cherries.

Wait until you see this!


Cherry Trifles
individual serving size style
This is one of those lick your bowl when no-one is looking recipes.  You know what, you may just lick your bowl no matter who is looking.  It's that good and so easy to make.





Ingredients to make 4 individual serving sizes:
4 whole graham crackers
1 3.4 oz instant vanilla pudding
1 cup milk
1/2 cup sour cream
1 cup cherries (pitted) (thawed if frozen)
1/4 cup sugar

Directions:
In a small saucepan, bring cherries and sugar to a boil.  Cook for about 8-10 minutes.  Set aside to cool.
Meanwhile, make your instant pudding by mixing together pudding mix, milk and sour cream.
Take 4 whole graham crackers and break them up into medium size pieces that will fit in your individual serving dishes.
On the bottom of each individual serving dish, place broken pieces of graham cracker.  Spoon in the prepared vanilla pudding.  Top that with remaining graham cracker pieces, followed by the rest of the prepared vanilla pudding.  For the last layer of the trifle, spoon on some of the cherry sauce.  Top with whipped cream and a mint leaf (if desired) and place into refrigerator for 2-3 hours before serving.
