I am sure you are starting to see lots of fresh tomatoes in your area. The tomatoes in my garden are still green, but the farmer's markets are loaded with them! I am thinking they come from a little further
south than me. An earlier spring for them.
In any case, I love to use what I find in the garden or farmer's market right away.

So today, I thought I would just keep it simple with Baked Parmesan Tomatoes.
This is one of those a little bit of this and a little bit of that recipes. Basically, you will need:
2-3 large beefsteak type tomatoes, fresh oregano, salt, fresh ground pepper,
shredded Parmesan cheese and olive oil.
Slice each tomato about 1/2 to 3/4 inches thick. Lay them flat on a cookie sheet. Season with salt, pepper and fresh oregano. Top each slice with cheese and a little sprinkle of olive oil.
Bake in a 350 degree oven just until cheese melts and becomes bubbly. Sprinkle with a little more fresh oregano and serve.
Each slice tastes like pizza minus all the bread...AWESOME!
