Steak Secrets Revealed!

I come from an area of the country known for steaks!

Gibsons SteakhouseSullivans Steakhouse and Kinzie Chophouse are among the best steakhouses in the city!  I have eaten at the first two and my husband frequents the last...regardless...AWESOME steaks!

So when I came across a way to recreate those awesome city steaks, I was skeptical.  But you know what? I LOVED it!  This steak recipe totally hits the mark!  And it doesn't need your grill!  Surprising, huh?  So when you get ready to plan on a quiet evening in...like Valentine's Day or another subzero evening...there is no need to go out because you can have an unbelievable steak dinner at home AND it won't cost you the price of a small vehicle...kidding, but those steakhouses are pricey!



So here's the secret recipe from Whits Amuse Bouche Blog...
You will need:
filet mignon - 2, 8 ounce filets
4 tsp salt
4 tsp freshly cracked pepper
1 stick butter
1 Tbsp olive oil 
2 Tbsp chopped garlic
1 Tbsp chopped parsley
1 Tbsp chopped thyme
1 tsp lemon zest

Take 1/2 stick of butter and soften it.  Add garlic, chopped herbs and lemon zest.  Form into a log and refrigerate until needed.  Take each filet and season generously with salt and pepper on each side (about 1 tsp of seasoning per side).  Preheat your oven to 400 degrees.  Heat the remaining 1/2 stick of butter and olive oil in a heavy, oven proof skillet.   When the skillet is hot, sear your fillets for 2-3 minutes per side until there is a nice brown crust.  Use the butter/olive oil from the pan to drizzle on top of the meat while searing.  Once both sides are seared, pop the pan into the oven for about 6-8 minutes, depending on how you like your meat done.  That time is a perfect medium to slightly medium rare.  During the last minute of cooking, take the log of seasoned butter and slice a nice large piece.  Place it on top of the steak.

This is really,really good!  I serve it on special "date night in" occasions.  I really didn't think it could be done.  Making a steak at home as good as a restaurant and in your own oven!  You know it won't cost you a small fortune either, so more steak dinners, right?!  So juicy and flavorful!  LOVE IT!  I'm thinking Valentine's Day!!!
