Candy Cane Cake Batter Cookies

I am on a candy cane kick!  Anytime I run across something with that pepperminty flavor, I'm in!
thekurtzcorner.com had a simple recipe that struck right on with THE flavor of the season and also had an almond flavor.  The combination of the two...delightful!

Candy Cane Cake Batter Cookies
Wait until you see the inside!  Here's what you need to make them:

Ingredients:
1 cup flour
1 cup yellow cake mix
1/2 cup unsalted butter, softened
1/2 cup sugar
1 tsp almond extract
1/4 tsp salt
3 Tbsp milk
1 bag candy cane Hershey kisses

Preheat your oven to 350 degrees.  Cream together the butter and sugar.  Add the flour, cake mix, almond extract and salt until combined with the creamed butter.  Add 3 Tbsps of milk to make of dough like consistency, add more if needed.  Chill the dough for 1 hour.
Roll out the dough and cut with a circle cookie cutter or a drinking glass that has about a 2 inch circumference.  Place a Hershey's candy cane kiss in the center and roll into a ball.
Bake your cookies for about 11 minutes.  Let sit for 1 minute before transferring to a cooling rack.  Makes approximately 2 dozen cookies.


These cookies are so moist with a hint of almond and then you hit the soft peppermint center.  It will totally curl your toes with delight!!!  Now maybe you can fit in those elf shoes you know you own...not me of course, wouldn't find anything remotely like that in my closet!
