I think I am having a love affair with baguettes and cheese!
I can't help it!
Anytime those two ingredients are on a recipe, I am all over it!
This recipe is no exception!!!
Meatball Sub Casserole...yum! You too will have a love affair!

Anyhow...
Here's what you need:
1 baguette cut into 1/4 inch slices
olive oil
1 lb of your own meatballs or a pkg of frozen meatballs
1/4 cup of frozen onions
1/4 cup of frozen bell pepper mix
2 cups of spaghetti sauce
1 8oz pkg of shredded mozzarella cheese
Preheat your oven to 350 degrees. Brush some olive oil on one side of each of the 1/4 inch baguette slices. Line the bottom and sides of a deep dish pie pan with the baguette slices, olive oil side up. Kind of like you have created a crust.
Bake the bread in the pie pan for about 8 minutes until the edges are golden brown.
In a separate bowl, mix meatballs, onions, bell pepper and spaghetti sauce.
Remove the bread from the oven and spoon the meatball mixture on top of the bread. Return to the oven and bake 30 more minutes or until heated.
Again, remove from the oven and sprinkle on the shredded mozzarella cheese and put it back in for another 7 minutes, until cheese is bubbly and slightly browned.
