As the temperature begins to fall, it is time to heat it up in the kitchen!
Soup's On!
I decided to try a new soup from Better Homes and Gardens.
It's called Coconut Lime Chicken Soup.
Not only will it warm my belly, but it reminds me of the tropics and staying warm is a state of mind, right?
Not by a long shot, but good in theory.
Coconut Lime Chicken Soup |
You will need 1 pkg of deli roasted chicken (Purdue), cut up
1 13.5 oz coconut milk
2 cups of water
1/2 cup 2% milk
1/4 cup lime juice
3 med. carrots, sliced thinly on the diagonal
1 Tbsp soy sauce
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp cumin
crunchy chow mein noodles for the top
Mix everything together in a large pot. Bring to a boil and reduce heat. Simmer for about 8-10 minutes or until carrots a crisp yet tender. Pour into bowls and sprinkle on some crunchy chow mein noodles.
There you go. Soup to warm the body and soul. You will love the mild coconut and lime flavor mixed in with the chicken, has kind of a Thai flavor and would be great with some egg rolls!
