Quick Chicken Corn Chowder

Quick Chicken Corn Chowder for those blustery days.
Try saying that 3x's fast.  
Quick Chicken Corn Chowder.  Quick Chicken Corn Chowder.  Quick Chicken Corn Chowder.


I was never good at tongue twisters.  Whether you can say it 3x's fast or not, you can sure whip it up quick for your family during the week.  Quick Chicken Corn Chowder will melt the snow right off their coats.  Warm and creamy and made with just 10 ingredients!


This is a thick, stick to your ribs kind of soup which is perfect for cold weather.
If you are wearing long sleeves or a jacket, it's soup season.  You may live in the North with below freezing temperatures, but I know you Southern folk get cold when it hits 60.  Am I right South Florida?  Although 60 right now sounds like beach weather, but it's all relative, right?
Back to the soup...


Very cheesy and yummy!  Pretty simple too!  Ok, I lied...there are actually 11 ingredients.  Let just count salt and pepper ("saltpepper") together and make it a 10 ingredient recipe.  I think that will work just fine...my conscience is now clear...no lying.


Ingredients:
1/2 cup frozen green pepper, red pepper, onion medley
2 pkgs (14.4 ounces each) baby gold and white corn, defrosted
1 1/2 cups heavy cream
1 cup skim milk
4 ounces sharp cheddar cheese, shredded
salt and pepper (aka "saltpepper")
1 cup cooked, chopped chicken breast
1/2 Tbsp olive oil
1 Tbsp unsalted butter
green onions,chopped for garnish
Directions:
Heat unsalted butter and olive oil in a large pot.  When hot, add frozen green pepper, red pepper, onion medley.  Cook until softened (approx. 3-5 minutes).  In a blender, blend 1 package defrosted corn with 1 1/2 cups heavy cream.  Spoon into pepper/onion medley.  Add remaining package of corn, milk and chicken.  Season with salt and pepper to taste.  Heat over medium high heat until bubbly, stirring constantly.  Once bubbly, add shredded cheddar cheese.  Just before serving, top with chopped green onions.



Pieces of corn and chicken in each and every spoonful!
