Cinnamon Sugar Shortbread

It's been a long week and now the weekend is finally here!
These five day work weeks are a killer.  :)
I think we should only have 3 work days a week.  How about you?
Wishful thinking, but it is the weekend and I am craving cookies!!!


Talk about melt in your mouth cookies...mmmmmm....mmmmm...good.


Each cookie has a warm, melt in your mouth interior with a sugary-cinnamon exterior.


Milk and cookies.  The ultimate comfort food treat!


The cool, fall like weather is back and I keep wondering if summer is truly over.  But I have to say, I am loving that fresh fall baked cookie aroma permeating my entire house.  Everyone in our house seems happier when there are delicious cookies in the cookie jar.  Including yours truly.

Ingredients to make 1 1/2 dozen:
1/2 cup unsalted butter, softened
1/4 cup brown sugar
1/2 tsp vanilla extract
1 cup flour
1/4 tsp granulated sugar
1 tsp cinnamon
Directions:
Beat softened butter, brown sugar and vanilla extract until creamy.  Add flour and beat until a soft dough forms.  Shape into a log and wrap in plastic wrap.  Refrigerate dough for 1 hour.  In a bowl, mix together granulated sugar and cinnamon.  Set aside. Preheat oven to 375 degrees.  Cut 1/4" slices.  Bake on an ungreased cookie sheet for 7-9 minutes in a 375 degree oven.  Remove cookies from oven and roll warm cookies in cinnamon sugar mixture.


Time to fill up the cookie jar!
