Southwest Roasted Tomato Taco Salad is a salad you need to eat this summer. Don't let any of that fresh summer produce go to waste. AND, guess what?
It's got Fritos!!! Enough said, right?
Oven roasted tomatoes add so much sweet flavor to this taco salad! A bed of lettuce topped with fresh avocado, red onions, shredded cheddar cheese, smoky ground beef and Fritos.
What brings this salad together? The cool, Southwest Ranch dressing for sure!
Ingredients for oven roasted tomatoes:
24 ounces grape sized tomatoes
1/2 Tbsp olive oil
1/2 tsp salt
1/4 tsp fresh ground pepper
1/2 tsp chili powder
Directions for oven roasted tomatoes:
Preheat oven to 400 degrees. In a large baking pan, place grape sized tomatoes. Toss the tomatoes with olive oil, salt, pepper and chili powder. Roast at 400 degrees for 10 minutes. Stir, then roast fir an additional 10 minutes. Set aside.
Ingredients for Southwest style ground meat:
1 1/2 lbs ground beef
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp oregano
1 tsp cumin
2 Tbsp water
Directions for Southwest style ground meat:
In a saucepan over medium high heat, cook meat until not longer pink. Drain and return to pot. Add remaining spices plus water. Cook for 2-3 minutes. Set aside.
Directions for Southwest Ranch dressing:
5.3 ounces Greek yogurt
1/3 cup sour cream
1 tsp red wine vinegar
1 tsp lime juice
1 tsp ground cumin
1 tsp chili powder
1/4 cup fresh chopped cilantro
1 Tbsp milk
Directions for dressing:
Whisk together all ingredients
Ingredients for salad:
oven roasted tomatoes
Southwest style ground meat
1/4 of a red onion, chopped
1 avocado, chopped
1 cup Fritos
2/3 cup shredded cheddar cheese
Southwest Ranch dressing
To assemble salad:
Toss all ingredients together and serve.
