Easy Mini Minty Brownies

Chocolate and mint are among the flavors I am craving this month.
Well, as far as chocolate goes, I crave it ALL the time!
But this time of year, chocolate and mint are the perfect combo!!!
Check out these yummy, little treats...

Wouldn't Easy Mini Minty Brownies be just perfect for St. Patrick's Day?
They are super easy because they start with a brownie box mix.  The mint flavor comes from Jr. Mints!  There is one right in the middle of the brownies!

I use a brownie box mix because it makes this recipe super easy and I haven't really come across a home-made version as good as the box.  Check out what else you need...

Ingredients for mini brownies:
1 brownie mix
(ingredients required on box mix may vary from box to box but is typically 2 eggs, 1/4 cup water, 3/4 cup vegetable oil)
2 boxes Jr. Mints
non-stick cooking spray
Ingredients for buttercream icing:
1/2 cup butter, softened
1 cup powdered sugar
1 Tbsp milk
3 drops green food coloring
white sprinkles
Preheat oven to 350 degrees.  Follow brownie package directions.  Spray mini muffin pan with non-stick spray.  Fill each cup halfway with brownie batter.  Cook for 15-18 minutes at 350 degrees.  Remove pan from the oven and press 1 Jr Mint into the center of each cooked brownie.  Let sit for 20 minutes before removing the mini brownie from the pan otherwise it is a goopy mess.  While the brownies cool, make the icing.  Mix together softened butter and powdered sugar.  Add the 1 Tbsp milk and 3 drops of green food coloring.  Frost the brownies.  Add white sprinkles and an additional Jr. Mint.

Take nibbles and make it last or just pop the WHOLE thing in your mouth!
