Prosciutto and Arugula Pita Pizza

Every Friday needs some pizza!
You made it through the week and are headed into the WEEEEKEND!
So let's celebrate with a slice of
Prosciutto and Arugula Pita Pizza

These personal sized pizzas are made on a pita topped with red onions, arugula and prosciutto, of course.  It smells divine while it is cooking, but wait until you taste the good if not better than it smells!

4 pitas
1 1/4 cup arugula
2 Tbsp olive oil + oil to brush pitas
1 tsp balsamic vinegar
salt and pepper to taste
1/4 cup red onion, sliced
4-6 slices of prosciutto
1 package Italian style 6 cheese blend
Preheat oven to 375 degrees.  Brush pitas with olive oil.  In a small bowl, mix together arugula, olive oil, balsamic vinegar, salt and pepper.  Divide arugula among 4 pitas.  Top arugula with slices of red onion and prosciutto.  Sprinkle cheese on top.  Bake at 375 for 10-12 minutes.  Serve.

The pita crust gets crispy and is topped with an explosion of flavors!
