Yee Haw! Apple Slaw!

Looking for a side dish?

Need something to jazz up some pork or chicken cutlets?

Have you tried apple slaw?

Yee Haw is it good!

Apple Slaw

This is perfect for a fall picnic too!  Packs very well and won't spoil in the cooler!

I discovered this recipe at www.southernliving.com, but made a few tweaks to adjust the taste...

Ingredients needed:
3 cups finely shredded green cabbage
1 cup finely shredded red cabbage
1 medium-size Granny Smith apple, cut into thin strips
lemon vinaigrette   
To make the vinaigrette:
2 Tbsps lemon juice
1 tsp Dijon mustard
6 tsps sugar 
1 tsp chopped garlic
1/4 tsp salt
1/4 tsp freshly ground pepper
7 Tbsps olive oil

Combine the cabbages and sliced Granny Smith apple.  Pour the vinaigrette over top and toss.

Yee Haw!  You are done!  A wonderful side dish that is cool and colorful.  What a fun side dish for a fall picnic too.  What a great way to use those picked apples to celebrate the season!
