A Yummy Sammy

The beginning of a school year is always crazy.  Sometimes it is hard to get a meal on the table!  I really don't like having to get fast food for dinner, so if I am really crunched for time...my fall back is a sandwich.  Trust me, no peanut butter and jelly for dinner.  This is quite the yummy sammy!  The secret is the bread!
Chicken Pesto Panini



Dust off that panini press, or in my case...the George Foreman indoor grill.
(I don't have a panini press and the George Foreman works just fine.)

You will need the following:
  • 1 bread (focaccia, quartered)
  • 1/2 cup pesto
  • 1 cup cooked chicken (diced)
  • 1/2 cup green bell pepper (diced)
  • 1/4 cup red onion (diced)
  • 1 cup shredded monterey jack cheese 
Heat up your indoor grill.  While that is heating up, spread the pesto on the inside of each piece of focaccia.  Next mix together cooked/chopped chicken, green pepper, red onion and shredded monterey jack cheese.  Divide the chicken mixture up on the bottom half of the focaccia quarters.  Place the remaining focaccia on top to create the sandwich.  Place each sandwich on the grill and press down for 2-3 minutes, just until the cheese melts.

That's it!  A yummy, hot sammy made right at home.  Having a sandwich on focaccia bread is really what makes it more restaurant like, not a boring at home sandwich.  Add some fruit and/or vegetables and you will complete the meal.  Couldn't be any easier!

Now you have more time to celebrate the little things that make life sweet during those busy school nights!
