This is a one pan meal you are going to want on your weekly rotation!
Lemon Garlic Chicken is incredibly tender and the red potatoes cook right alongside the chicken.
Each piece is full of lemon and garlic! The flavor is amazing! All from 1 pan!
The chicken is seared on the stove-top, potatoes are added and then after a few minutes of cooking on the stove, the entire pan gets moved into the oven for baking. The flavor is wonderful! It all cooks in one pan, which is perfect for those busy weeknights!
Ingredients:
1/3 cup olive oil
1/4 cup lemon juice
1 jar capers, drained (can be found by the olives)
2 tsp salt
1 tsp pepper
3 Tbsp olive oil
1 Tbsp unsalted butter
1 1/2 Tbsp minced garlic
2 lemons, sliced
6 chicken legs
4 chicken thighs
2 lbs red potatoes, quartered
Directions:
Preheat oven to 400 degrees. In a small bowl, whisk together 1/3 cup olive oil, 1/4 cup lemon juice and 1 jar capers. Set aside. Season chicken legs and thighs with salt and pepper. In a large oven proof pan, heat butter and 3 Tbsp olive oil over medium high heat. Add the garlic. Stir for 1-2 minutes, until butter is infused with garlic flavor. Add seasoned chicken pieces, skin side down. Cook for approximately 7-8 minutes. Flip chicken over and add quartered potatoes. Cook for an additional 5 minutes over medium high heat. Turn off heat, pour reserved lemon mixture over top. Add lemon slices. Place entire pan into oven. Bake in preheated 400 degree oven for 45-50 minutes, until chicken is no longer pink.
By cooking the chicken on the stove top for a few minutes before popping in the oven allows the juices to be sealed into the chicken. Then, when the chicken is smothered in the lemon juice mixture and baked...one amazing dinner!
