Pumpkin Sugar Cookie Dough Truffles

Yum
Tricks and treats...that's what Halloween is all about!
Or is it?
When I was of trick or treat age, I had a neighbor who never just handed out treats.  Nope, when you rang my neighbor's doorbell and spoke the magic words of "trick or treat," one expected a handful of treats, maybe a comment or two about your costume and that was it.  The easiest way to get some chocolate...right?  Not so fast.  This neighbor really took the statement "trick or treat" very literally.  You wouldn't get a treat unless you did a trick...nothing naughty...it had to be a trick that was a talent.  Every year I dreaded heading to that house, yet the lure of some possible treat was just too strong.  Seems so funny now.  So, be nice to your trick or treaters.  Just give them candy and send them on their merry way.
Speaking of treats, check out these simple Pumpkin Sugar Cookie Dough Truffles!

Pumpkin Sugar Cookie Dough Truffles are made with just 7 ingredients and are just perfect for a Halloween party or your own lil' goblins.

Behind that candy coated exterior lies an absolutely delicious orange flavored cookie dough center.
Topping each truffle is a mini Reese's Peanut Butter Cup stem.
Cute, simple and yummy!

Ingredients to make 18:
1/2 cup butter
3/4 cup sugar
1 1/3 cup flour
1/2 tsp vanilla extract
2 Tbsp orange juice
1 package orange candy melt (12 ounces)
1 package mini Reese's Peanut Butter Cups
Directions:
Whip butter in a mixing bowl.  Mix in sugar.  Add flour.  Next add the vanilla extract and the orange juice.  Mix until a soft dough forms.  Roll into 1" balls.  Place in refrigerator for 1 hour.  Follow the directions on the orange candy melt to melt the discs.  Dip each sugar cookie truffle into the melted orange candy.  Swirl to coat.  Place on waxed paper and top with a mini peanut butter cup.  Let harden.

Are you getting your Halloween on?
Here's a cute way to get you started in the kitchen and it is an easy last minute treat too!

Celebrate the little things that make life sweet,
Christine
