Summer Corn

We did a lot of driving during the summer.
No matter which direction we traveled, there were fields and fields of corn. When you live in the Midwest, it doesn't take long to hit a cornfield.
The corn looked green and lush probably from all the rain that took place early this summer.  Who knows?  I am not a farmer, but it sure seems like lots of sweet corn could be found.
So, with that in mind and Labor Day a few weeks off, I thought we'd check out my 2 favorite summer corn dishes.  Actually, these corn recipes are pretty similar, but served in different formats.


Are you an "on the cob" or "off the cob" kind of eater?
For the longest time, I always cut the corn kernels off the cob.  It is  neater that way.  I think the orthodontist scared me to death about not eating corn on the cob while wearing braces.  30 years later and past the orthodontist fear, I now love corn on the cob!  It's messy and gets all between your teeth kind of good.  TMI, right? Anyhow, whether you like your corn on the cob or off, these recipes just make Summer Corn even more fabulous!

Grilling the Corn corn gives it that delicious smoky flavor combined with fresh cilantro, lime and Queso Fresco, whether you eat it on or off the cob.

Grab some ears of corn at your local farmer's market or swipe some from a field as you drive by....no, don't do that.  That would be stealing.  Stick to the farmer's market!  Summer is still here and even though school has started or is about to start in your neck of the woods, let's hold on to all the flavors of summer!
