Shrimp Avocado Tostadas

Fiesta time is almost here, not just because it's almost Cinco de Mayo.  It's much more than that.  We are about to flip the calendar from April to May and hopefully we can close the door on winter...finally!  I can't wait to get out into the garden to plant and just sit in the sun with a glass of sweet tea!  Yes, reason enough to celebrate with a fiesta!  Warm temperatures and Cinco de Mayo celebrations mean you need some fiesta style recipe ideas.  Here's a good one...




Shrimp Avocado Tostadas are an easy to assemble Mexican inspired dinner or snack.
A crisp tostada is topped with a creamy guacamole and chili lime shrimp.  Sprinkle of some fresh cilantro too!  Now you have fiesta!


Ingredients:
1 package of large tostadas
1 lb peeled shrimp, tail removed
1 tsp salt, divided
1/2 tsp chili powder
2 Tbsp lime juice, divided
1 Tbsp unsalted butter
3 avocado
1/4 cup red onion, chopped
2 Tbsp fresh cilantro, chopped
1/4 cup red pepper, chopped
Directions:
Mix peeled shrimp with 1/2 tsp salt, and 1/2 tsp chili powder.  In a large skillet, heat 1 Tbsp butter.  Once melted, add shrimp and 1 Tbsp lime juice.  Cook until shrimp turns pink, approximately 4-5 minutes.  Remove from heat and set aside.
Peel avocado.  In a bowl, chop avocado.  Mix in 1 tsp salt, 1 Tbsp lime juice, red onion and 2 Tbsp fresh cilantro.  Mix until desired guacamole texture is reached.
On each crispy tostada, Spread on some guacamole.  Top with chili lime shrimp and chopped red pepper.  Sprinkle of some extra fresh cilantro and a squeeze of fresh lime.  Serve.
