Goat Cheese and Pecan Tea Time Sandwiches

Tea time has always been a special activity in our house.  Spending our honeymoon in England, the hubby and I adored afternoon tea in thatched cottages and along the rugged coast.  My parent's helped us celebrate our first anniversary at a tea house in Palm Beach.  The girls had tea times with their Grammy.  We even loved having tea time during the winter months and while watching the Royal Wedding of many years ago.  With Mother's Day just around the corner, I thought I would share a savory tea time sandwich so you could create your own tea time with the special girls in your life.

Just boil up some of your favorite tea (or lemonade for the little ones) and add a few savory and sweet treats.
Then relax and just let the conversation flow.
Goat Cheese and Pecan Tea Sandwiches are a wonderful addition to a treasured time.
And they are actually really easy to put together!
When you cut off the crusts...they end up looking fancy.
Sandwiched between slices of bread is a creamy blend of thyme and garlic flavors with the crunchiness of pecans.  I love it!



Ingredients to make 12 tea size sandwiches:
4 ounces cream cheese
4 ounces goat cheese crumbles
1/2 tsp minced garlic
1/2 Tbsp thyme leaves
salt and pepper to taste
1/2 Tbsp milk
1/2 cup pecan chips
6 pieces of very thin white bread (I used Pepperidge Farm)
Directions:
With an electric mixer, whip cream cheese and goat cheese until well blended.  Mix in minced garlic, thyme leaves, salt and pepper to taste as well as the milk.  With a spoon, stir in the pecan chips.  Cut the crust off 6 pieces of very thin white bread.  On 3 of the pieces, spread on a generous amount of cream cheese mixture.  Top with a slice of bread.  Cut each sandwich into quarters.  Serve with a piece of thyme on top.
