Strawberry Popcorn Snack Mix

Doesn't Monday seem to creep up rather quickly?

I feel like it was just Friday!

Weekends seem to fly by!

So, when Mondays roll up, I get the Monday Morning Blues.  Sometimes I just want to stay under the covers and wait until it is Tuesday.  Then I'd be ready to start the week.  Well, if you have a case of the Monday Morning Blues, check out this snack mix.  It'll not only snap you out of a Monday Morning fog, but it will be a fun snack for Valentine's Day!

Strawberry Popcorn Snack Mix is filled with strawberry flavored popcorn, dried strawberries, peanut m&ms and white chocolate chips.  There's a little bit of sweet, a little bit of salty and a little bit of tart in each and every bite!

Ingredients:

1/4 cup unsalted butter

3 Tbsp light corn syrup

1/2 cup light brown sugar

1 packet strawberry gelatin

1 8 ounce bag of popped, plain popcorn

1 1ounce package freeze dried strawberries

1 1/4 cup white chocolate chips

1 package (11.4 oz) Valentine color m&ms

Directions:

 Preheat oven to 300 degrees. Line a shallow baking dish with parchment paper.  Spread out popcorn in shallow baking dish.  In a small saucepan, heat unsalted butter and corn syrup over medium high heat.  Add the brown sugar and strawberry gelatin.  Stir until combined.  Heat for an additional 3-4 minutes. Pour over the popcorn.  Toss to coat popcorn.  Place in 300 degree oven and bake for 10 minutes.  Remove from oven.  Cool and break into pieces.  In a large bowl, combine the strawberry popcorn, dried strawberries, white chocolate chips and Valentine colored m&ms.  Store in an airtight container for 7-10 days.
