We use leftover turkey for sandwiches, casseroles or turkey salad.
BUT, have you used the leftover turkey from Thanksgiving for pizza?
BEHOLD THE THANKSGIVING PIZZA!
It may be the next best thing to turducken!
All you really need are leftovers from your Thankgiving feast and when Uncle Don starts to go for that extra slice of turkey...stop him dead in his tracks so you will for sure be able to make Thanksgiving Pizza. Tell him that he can come back tomorrow. :)
Ingredients:
1 whole wheat flatbread (per 1-2 people)
Cranberry BBQ Sauce (click link for recipe)
leftover turkey
red onion, sliced
dried, sweetened cranberries
fresh mozzarella
pieces of goat cheese
rosemary
Directions:
Preheat oven to 350 degrees.
Spread Cranberry BBQ sauce on each flatbread. Top with red onions, leftover turkey and cranberries. Place slices of fresh mozzarella and pieces of goat cheese on top. Sprinkle of rosemary. Bake at 350 for 8-10 minutes or until cheese melts.
I'm telling you, your Thanksgiving leftovers never tasted or looked so good! Kind of breathes new life into those leftovers!
Celebrate the little things that make life sweet,
Christine
