Carrot Walnut Wild Rice

We have a college aged daughter studying in Iowa.  So we go on over for parent's weekend, mom's weekend and dad's weekend.  Not too long ago my hubby headed over for dad's weekend.  He had a fabulous time!  Easy drive over and an easy drive back.  On his drive home, he was telling me about ALL the trucks carrying turkeys!  Well, we all know where they are going...I try not to think about it.  He was just fascinated by all these wild turkeys on trucks heading off on their, let's call it an "adventure."  
Oh my...Let's not talk turkey...let's talk sides!

Carrot Walnut Wild Rice
I spotted this recipe on Huffpost Taste and had to give it a try.
Yum! That wild rice is so flavorful and the textures really give this rice that gourmet taste!
It all starts with a box of long grain wild rice and before you know it, perfection!

Ingredients:
1 pkg. fast cook Long Grain Wild Rice
2 carrots, chopped
1/4 cup chopped walnuts
1/4 cup dried, sweetened cranberries
3 1/2 Tbsp unsalted  butter
1 Tbsp orange juice
salt and pepper to taste
Directions:
Bring rice, seasoning packet, water (amount on box) and 1 Tbsp unsalted butter to a boil.  Add chopped carrots.  Reduce heat to low and simmer covered for 5 minutes.  Melt remained butter in microwave.  Stir in orange juice.  Add this mixture to the rice.  Finish by mixing in walnuts and cranberries as well as any salt/pepper to taste.




You can whip up this side dish quicker than a farmer catching a turkey!
