I am going to be completely honest with you.
I don't really like pumpkin pie. Slather a bunch of whipped cream on it and I can choke it down. But the wierd thing is that I love pumpkin flavored foods! Pumpkin bread, pumpkin cupcakes, pumpkin cinnamon rolls and pumpkin risotto are the best! I just don't like pumpkin when it is in pie form. So, I am always testing out other pumpkin dessert recipes and here's a good one!
Pumpkin Pie Mousse
Wow! This is so yummy! It actually has the flavors of a pumpkin flavored tiramisu! It's quick and easy! It can be made the night before Thanksgiving! Always a good thing when you can premake items before the big day. It's so light! You can have a piece of this and a piece of something else on your dessert table. There is always room for extra dessert on Thanksgiving!
Ingredients:
1 box of gingersnap cookies
8 oz cream cheese
1/2 cup powdered sugar
1/2 cup pumpkin pie filling
1 tsp cinnamon
1 cup heavy whipping cream
1/4 cup strong hazlenut flavored coffee
1 tsp cinnamon and 1/4 cup cocoa powder for dusting
Directions:
In an 8 x 8 ungreased pan, overlap gingersnap cookies. Mix together cream cheese, powdered sugar, cinnamon and pumpkin pie filling until smooth. Set aside. Whip 1 cup of heavy whipping cream until stiff peaks form. Fold in the pumpkin cream cheese mixture. Spread 1/2 of the cream cheese mixture over the top of the gingersnap cookies. Add another layer of gingersnap cookies, overlapping the cookies. Pour the hazlenut coffe over the gingersnaps. Add the remaining cream cheese mixture over top. Dust with cinnamon and hot cocoa. Cover and refrigerate for 4-6 hours minimum.
When you pour the coffee over the gingersnaps, they start to melt and provide this delicious cinnamon/gingersnap flavor right smack in the middle of the pumpkin pie mousse. This'll be one of those lick your plate clean dessert recipes! Is that proper on Thanksgiving?
